Class Descriptions

Lost in translation - the errors in the Scully translation of Scappi and their effect on the food produced taught by Mistress Helewyse, OL
The new Scully translation of Scappi is a masterwork, over 1000 Italian renaissance recipes are available in English for the first time. However, there are a few glitches here and there, from the minor (a lemon becomes a lime) to the major (a 16oz libra vs a 12 oz libra). We will cover some of these variances in the class and recreate at least two recipes to see the effect that they have on the finished result. Class will be somewhat hands on (teacher will ask for assistants at various times) and also lecture format. Handouts will be provided, limited to 20 There is no cost for the class Age limit 13 for hands on portion with parental guidance
And how do you make your head of milk? taught by Giles
This class will teach the process for making a cream rennet custard from 'Gallo, Agostino Le Vinti giornate dell'agricoltvra et de'piaceri della villa'. This will teach some of the basic concepts involved in working with milk products and rennet. The student will leave class with approximately 2 cups of 'Head of Milk', a 16th century rennet custard. There is a $2.00 fee to cover materials. I would prefer a limit of 6 students unless they don't mind working two to a station. Since we will be working with heat and hot milk there will be an age limit of 16.
